Coffee is evaluated by professional Q-graders under the Specialty Coffee Association (SCA) system. Each lot is scored out of 100 based on flavour, aroma, body, balance, sweetness, and clarity — and must score 80 points or higher to earn the title specialty. That’s a strict threshold. There’s also no room for defects — meaning no quakers, mould, or damaged beans that could affect the flavour. Every bean must be clean, well-processed, and traceable to its origin.
