Grown in the high reaches of Blue Mountains, where altitude, mist and volcanic soil do the heavy lifting. The climate leans in your favour here. Regular rainfall. Cooler conditions. Slow development. The result is density, sweetness and clarity in the cup.
At Sherwood Forest Estates, the Bramwell family keeps things tight. Careful cultivation. Precise processing. Nothing rushed.
Coffee is grown between 1,160 and 1,740 metres above sea level. Warm days build the sugars. Cool nights lock them in. That contrast shows up in the cup. Structured, balanced, composed.
Cherries are selectively handpicked on steep slopes, then moved to the estate’s wet mill. Pulped. Fermented for around 24 hours. Washed clean. Then dried slowly on patios under the Jamaican sun.
Clean lines. Natural sweetness. A cup that holds its shape from start to finish.
Once dry, parchment is selectively hand-sorted to ensure that each lot is consistently high quality.
