          About Us

Born in Melbourne. Built by Roasters.

We’re 36th Parallel Coffee Roastery — born in Melbourne, fuelled by caffeine, and shaped by a decade in the specialty coffee game.

Our team lives for the roast curve, the aroma of first crack, the satisfaction of a cup that just lands.

This city taught us precision, passion, and pride in every pour — and we’ve built our roastery on those same values.

The Art and Science of Roasting

Roasting is equal parts intuition and instrumentation.

We read data, we read colour, we read the room. Our Brambati 120 kg and 30 kg roasters give us full control — airflow, drum speed, heat transfer — while our senses do the rest.

          The goal? Harmony.

Our signature roast profile runs exactly 14 minutes and 23 seconds, a curve that builds sweetness, body, and clarity in perfect balance.

It’s where science meets instinct — where experience meets feel.

          That’s the 36P way.

Roasted Weekly. Always Fresh. Always On Point.

We roast weekly, so every bag leaves the roastery fresh, rested, and at its peak.

Each batch is cupped, logged, and signed off by our team — no roast leaves the floor until it hits our standard.

From espresso blends to filter profiles, capsules to wholesale supply — consistency and flavour are everything.

Blends That Perform. Batches That Push Boundaries.

Our core blends are built to perform — clean, rich, dependable, and perfectly balanced. But we never stop experimenting.

Our rotating single origins showcase the nuance of terroir, process, and seasonality, while our decaf program proves that great flavour doesn’t need caffeine to shine.

And behind it all sits our small-batch development lab, where new ideas are roasted, tasted, and refined — the birthplace of every future 36P blend.

          Precision Meets Power

We’ve built a serious operation — capable of roasting up to 2.4 tonnes of coffee per day with unmatched precision and repeatability.

Our production line integrates destoning, blending, and fully automated packaging systems that bag, seal, and label with pinpoint accuracy.

But even with all that tech, craft always comes first.

Every roast starts with a roaster’s eye and ends with a cup on the table.

It’s where the art and science of roasting truly come together.

          Sustainability as Standard

We roast using solar energy, recycle chaff and packaging waste, and continue to move toward a carbon-neutral footprint.

Through our partnership with One Tree Planted, a tree goes in the ground for every pack of coffee sold online — one cup, one tree, one small step toward balance.

The Parallel That Connects Us All

The 36th parallel cuts through some of the world’s great coffee regions — and right through Melbourne.

It’s the invisible line that connects farmers, roasters, and drinkers who all care about the same thing: exceptional coffee.

36th Parallel Coffee — handcrafted in Melbourne, driven by science, inspired by art, and shared with the world.
