The Mountain Water Process gently decaffeinates the beans without using any harsh chemicals, ensuring that the exceptional flavours are preserved. This method allows you to enjoy the full-bodied, complex taste of Sidamo coffee, with all its smoothness and natural sweetness, without the caffeine.

A typical 12oz cup of caffeinated coffee can be anywhere from 120 mg to 180 mg of caffeine, whilst a decaffeinated cup of coffee of the same size has caffeine levels of around 2mg for Mountain Water Decaf.

The Mountain Water Process uses hot water and carbon filters to gently extract caffeine. During this, the beans absorb moisture and some of their soluble compounds (like acids and sugars) leach out. This softens the bean’s structure — when they’re roasted later, they caramelize and darken faster than regular beans at the same roast level.
