This cup comes from family-owned farms located near the city of Antigua between volcanoes named Agua (water) and Fuego (fire) within the department of Sacatepequez, Guatemala. Coffee produced in the Antigua region has a protected designation of origin (PDO) because of Antigua’s renowned coffee reputation. Coffee is traditionally grown in this region under a canopy of grevillea trees and native shade trees called chalum (ingas).

This is one of our favorite coffee from Guatemala, the Genuine Antigua Los Volcanes are by far the best coffees with regards to quality. 

The taste profile of these coffees is, above all, complex. Time and time again, we are amazed about the variety of flavour nuances that are brought out depending on the roasting grade.

Our specialty (single) coffees are roasted from the highest-quality green coffee beans to their greatest flavor potential. All our specialty coffees are free of defects and have a distinctive character in the cup, with a score of 80 or above when graded according to SCAA Standards.

Once the beans are processed and delivered, our master roaster at 36P spends a considerable amount of time to understand the coffee and develop unique roast profiles.

After trying different profiles and cupping we decide on one profile that brings out the best out of that particular bean.

We roast all our specialty coffees in small batches to maintain freshness and monitor quality.

We develop our espresso roast coffee further in the roaster to increase the caramelisation and body, which suits being prepared on an espresso machine to extract delicious elixir.

Our filter roasted coffee has been less developed in order to retain more of the sparkling acidity that a filtered cup of brew desires.

But the devastation witnessed in the state of New South Wales is nearly unfathomable - 3.6 million hectares (8.8 million acres) have been lost, over 1,500 homes destroyed or damaged, and 24 people have been killed. New South Wales is home to some of the most iconic of Australia's wildlife - koalas, wombats, and kangaroos to name a few - and their habitat is rapidly declining.
