Exceptional quality coffee with great taste in the cup. We take the roast to a light-medium roast profile for espresso which creates a great balance whilst maintaining the distinct notes of this fabulous coffee. We gave this exceptional coffee a cupping score: of 87.75.
For those of you who are not familiar with Hydro-Natural processing, the cherries are partially dried before being rehydrated, then dried to their final moisture content of 10-11%. This form of processing highlights the true character of the single-origin beans like no other process.
Finca Guadalupe Zajú has a long-standing in the history of coffee production in Mexico. Located in the famous Soconusco region of Chiapas, it was first established in 1890, before being taken over by a German-Mexican couple in 1945. The couple diligently tended to the farm for almost 60 years, before selling to the current owner Eduardo 'Teddy' Esteves.
Teddy and his family have been involved in coffee, tea and cocoa for over 150 years. Bringing this wealth of experience and knowledge to Guadalupe Zajú has allowed the farm to flourish in recent years. 100% of the coffee is shade-grown, with meticulous attention paid to picking, fertilising and pruning. Older, less productive parts of the farm have been renovated with hybrid varieties (in fact half the farm is now Marsellesa) that have a high yield and excellent cup quality. There is a full-time agronomy and management team dedicated to each lot of the estate, as neighbouring farms such as La Gloria and Chanjúl have been purchased under the Guadalupe Zajú name in recent years). Teddy has also called upon post-harvest experts to consult on processing and drying at the farm, including Aida Battle and, most recently, Camilo Merizalde of the Santuario Project.
Our specialty (single) coffees are roasted from the highest-quality green coffee beans to their greatest flavor potential. All our specialty coffees are free of defects and have a distinctive character in the cup, with a score of 80 or above when graded according to SCAA Standards.
Once the beans are processed and delivered, our master roaster at 36P spends a considerable amount of time to understand the coffee and develop unique roast profiles.
After trying different profiles and cupping we decide on one profile that brings out the best out of that particular bean.
We roast all our specialty coffees in small batches to maintain freshness and monitor quality.
We develop our espresso roast coffee further in the roaster to increase the caramelisation and body, which suits being prepared on an espresso machine to extract delicious elixir.
Our filter roasted coffee has been less developed in order to retain more of the sparkling acidity that a filtered cup of brew desires.

Australia is currently experiencing one of the largest natural disasters in history. This year's fire season has brought about unprecedented destruction as wildfires have spread across every Australian state, burning up nearly 6 million hectares (15 million acres) of bush as of January 2020. But the devastation witnessed in the state of New South Wales is nearly unfathomable - 3.6 million hectares (8.8 million acres) have been lost, over 1,500 homes destroyed or damaged, and 24 people have been killed. New South Wales is home to some of the most iconic of Australia's wildlife - koalas, wombats, and kangaroos to name a few - and their habitat is rapidly declining.
Trees have been chosen that will bring the greatest overall benefit to the region. This includes various types of native trees and companion plants, depending on the specific needs of each section of habitat being restored across Australia.
